    Istrian ox (Boškarin) meat is protected by a Protected Designation of Origin (PDO) at European Union level, guaranteeing its origin, traceability, and production within the native area of Istria. It is obtained exclusively from the indigenous Istrian cattle breed, which has been present for centuries on the Istrian peninsula, the Kvarner islands, the Karst (Kras), Ćićarija, and the Podgraje valley, including the southern slopes of the Brkini hills.

  • Istrian sheep cheese

    Istrian sheep cheese is a hard, full-fat cheese obtained by coagulating raw or pasteurised sheep’s milk using rennet, with the separation of whey. The milk used for the production of Istrian sheep cheese is obtained from sheep of any breed, provided that they are raised exclusively within the area of the Istrian peninsula and the Northern Adriatic. Where the cheese is produced exclusively from the milk of the Istrian sheep breed, it may be labelled as “100% milk from Istrian sheep.”

Istrian honey

Istrian Honey PDO is a natural product of honeybees (Apis mellifera), which gather nectar and honeydew on the sunlit slopes of Istria, amid a rich mosaic of plant communities. It is obtained through cold extraction, without heating the comb, thus preserving its original aroma and quality. This honey encompasses a wide range of varieties - acacia, sage, chestnut, linden, heather, as well as multifloral and honeydew honey - each distinguished by its own characteristic aroma and flavour.
