ISTRIAN PROSCIUTTO PDO (Entered in the PDO Register by Commission Regulation (EU) No. 2015/1840 of 7 October 2015) - PDO-HR+SI-1041
For centuries, Istrian prosciutto has been a source of pride for the people of Istria. It is not merely a food product, but a reflection of a rich cultural heritage, traditionally shared with guests even in the most modest of times. It represents a bond that brings families together, passing on tradition, values and a sense of belonging to future generations.
Istrian prosciutto is a traditional dry-cured meat product made from pork leg, with the trotter, skin, and subcutaneous fat removed, while the pelvic bones are retained. It is dry-salted using sea salt and seasoned with spices such as pepper, garlic, bay leaf, and rosemary. The prosciutto is air-dried and never smoked, undergoing a natural drying and ageing process lasting at least one year. It is distinguished by its refined aroma, a mild and moderately salty flavour, and a characteristic scent of matured pork and aromatic herbs. The production area of “Istrian prosciutto” covers part of the Istrian peninsula, including the Slovenian part of Istria and the County of Istria in Croatia, excluding the islands.
Istrian prosciutto is a Croatian indigenous product protected at EU level with a Protected Designation of Origin (PDO) status, in accordance with European Union standards. Only prosciutto that fully complies with the prescribed production process and has been positively assessed by an accredited certification body may bear the official stamp, which guarantees its quality, authenticity, and traditional character.
